Food security is reliable access to a sufficient quantity of affordable, safe, and nutritious food.

On this three week course, you’ll learn some of the challenges of ensuring food security faced by researchers, policymakers and individuals worldwide.

Understand food safety and nutrition issues and why they occur on a global scale

You’ll explore how large-scale change (industrialisation, globalisation, population growth and climate change) affects food safety and understand the consequences for the world’s health and nutrition.

Uncover the evolving challenges of ensuring food safety

Using examples from current research, you’ll explore common and emerging global food safety issues.

You’ll investigate some well- documented food scandals and scares as well as hidden or chronic exposures to contaminated food before you discover innovations designed to counter food safety risks.

Explore today’s pressing global nutrition issues

As you consider whose responsibility it is to maintain the safety of our food, you’ll learn the biological function of different nutrients and examine the global impact of nutrient deficiency and malnutrition.

You’ll also explore global nutrition challenges and ways of reducing the burden of malnutrition and nutrition deficiencies. You’ll consider the difficulties in meeting macronutrient and micronutrient requirements and explore research into developing sustainable responses to the world’s nutritional needs.

This course draws from innovative research into food safety and nutrition conducted by the University of Leeds, Jiangsu University in China, and The Nelson Mandela African Institution of Science and Technology in Tanzania.

This course is financially supported by the British Council.

This course is designed to educate and train the next generation of scientists in food safety, nutrition, and agriculture and broaden public awareness of food security issues.

  • This was a fabulous course and really brought together many issues about nutrition, sustainability, and safety to address public health strategies. There are many excellent case studies well-chosen to illustrate the points. I am very glad I did this course!

    Very well elaborated link between Food safety and nutrition, the food safety and nutrition challenges in a rapidly growing world population and how we can approach these challenges to achieve health and wellbeing. Excellent!

    It was a useful cours, specialy when we think about the link between the following elements:

    Climate change

    Biodiversity

    Conservation agriculture

    Food safety (aflatoxin control) and nutrition

    Soil and seeds

    Agroecology

    Farming practices

    Postharvest handling

    And regarding to the link between diet, nutrition, food safety, and the health outcomes of populations. This is conducted in the context of climate change and biodiversity.

    This was a very informative course. I learned a lot. It was very clear about many nutrition challenges. It also explained the interconnected nature of the solutions to meet these challenges and provide everyone with safe food. I appreciated the opportunities to read around the subjects. A few of the links did not work but I looked them up separately. I think the approach to offering comments needs a rethink if it’s considered important to provide an opportunity for discussion.

    Very interesting course with a LOT of reading - time to read should not be underestimated. It would be good to have video recordings used much more to use all senses in learning process (not only reading, but also listening). Eye opening knowledge to some of the basic food safety issues.

    The is a short but interesting course. It is educative as well as informative, and in this short while I can boldly say I have achieved a lot as my eyes have become more opened to various problem associated with food nutrition, food safety and food security. Also, likely solutions has been suggested to help face these issues globally. Furthermore, the contribution of each learner cannot be overemphasized. In conclusion, this course is an eye opener and I want to appreciate the educators for their impartation and time.
